Lalia organic extra virgin olive oil is characterized by a balanced blend pleasantly herbaceous and medium bitter and spicy. Our classic blend consists of three varieties of Sicilian olives: Nocellara del Belice,Biancolilla and Cerasuola. In addition, in the lands of Palazzo Adriano we cultivate Piricuddara, a neglected variety that is characterized by the high number of polyphenols. We grind the olives in our mill which is located on the farm a few meters from the trees.
The quality extra virgin olive oil must absolutely remember in the perfume and aroma the fruit from which it comes: the olive.
Therefore, it must not be odorless, colorless, tasteless; for too long, in fact, the message that promoted a soulless oil has therefore passed without all the nutritional, health and sensorial characteristics that make extra virgin olive oil the best of all oils.
All extra virgin olive oils should therefore have an albeit minimal fruity sensation of olive which identifies an oil with a healthy, fresh and odor-worked olive oil at the right degree of ripeness.
Fruity is a fundamental characteristic that only oils extracted from olives (since they are obtained only from the fruit through the use of exclusively mechanical processes) and not oils obtained from seeds, which undergo industrial processes to be extracted and made edible refining with chemical solvents.
The fruity is therefore that set of olfactory sensations perceived directly and / or nasal back, dependent on the variety of olives and in any case characteristics of the oil obtained from fresh and healthy, green or ripe fruits.
Depending on the intensity, the fruitiness can be "green" or "ripe".
It is "green" when the olfactory sensations are reminiscent of green fruits, characteristic of the oil obtained from green olives and, therefore, harvested just before or during veraison (fruit ripening).
It is "ripe" when, on the other hand, the olfactory sensations are reminiscent of those of ripe fruits, characteristic of the oil obtained from more mature olives.
